Ingredients:

1 block of extra-firm tofu, crumbled
2 soy sausages, diced
1/2 cup of diced onion
1/2 cup of diced bell peppers
1/2 cup of sliced mushrooms
1 tablespoon of nutritional yeast
1/2 teaspoon of garlic powder
1/2 teaspoon of turmeric
Salt and pepper to taste
1 tablespoon of olive oil

Instructions:

In a skillet, heat the olive oil over medium heat. Add the onions, bell peppers, and mushrooms and sauté for about 5 minutes, until the vegetables are softened.
Add the diced soy sausages to the skillet and cook for 2-3 minutes, until they start to brown.
Add the crumbled tofu to the skillet and stir to combine with the vegetables and soy sausages.
Add the nutritional yeast, garlic powder, turmeric, salt, and pepper to the skillet and stir to combine.
Cook for about 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly browned.
Serve hot, garnished with chopped fresh parsley or scallions, if desired
